Class was taking forever. Yet Shauna and Brett were having a great time. Heck, everyone seemed to be having a great time. Just not James and me. I mean, James continued to be cordialâof course he would continue to be nice. But it was obvious Iâd disappointed him, and I couldn't seem to find a way out of it. Even when I sliced up a couple of strawberries into a pretty fan shapeâone of the assistants helped me with thatâto put on the plate with the chocolate lava cake, I only got a small smile and âI think Chef Mike will like that,â before he turned back to making the whipped cream.
The judging for the contest started at the front of the classroom, and Chef Mike and one of his assistants slowly made their way around the room. There was a lot of laughter. Chef Mike nailed it with his cooking class.
By the time James added the whipped cream and a little drizzle of chocolate sauce to the cake, Chef Mike was with Shauna and Brett, and James and I were both eavesdropping.
âI love the pairing of your creamy orzo with the sweet and spicy salmon. Itâs a delicious combination, and the textures are great together. And this salmon is cooked perfectly. What method did you use to cook it?â Chef Mike took a bite of the salmon as though he hadnât already tasted three entrees tonight.
Shauna gave him a big grin. âI play cooking shows at home for background noise. One day I saw a show that said the best way to cook salmon was âlow and slowâ in the oven. We knew weâd have a lot of time tonight, so that's what we did.â
Chef Mike took one more bite, scooping up both the salmon and orzo onto his fork. He closed his eyes and moaned in appreciation. âYou guys did good. Well done.â He clapped Brett on the shoulder and winked at Shauna. Shauna squealed and jumped at Brett, who caught her in a big hug. I shot James a look, but he was already greeting Chef Mike.
âOk, letâs see what you guys have got. You went with your own entree, right?â
James nodded and answered. âWe did. Dr. Ellie wanted to learn some more recipes, so we did a spicy chicken thigh bake with the lava cake for dessert.â
Chef Mike nodded along and pointed to the salsa. âAnd the peach and mango salsa?â
James waited for me, so I replied. âI thought a cool salsa would work well with the spicy chicken dish, but I wasnât expecting the recipe to call for jalapenos. After James and I talked about it, I just took the spicy elements out, so we got the cooling effect we wanted.â
âGreat idea. Alright, let me get a taste.â Chef Mike reached for the plate, gave it a once-over, and took a bite. âVery nice, you guys. The chicken thigh is tender with just a bit of spice, and the salsa pairs with it nicely. Good job taking the heat out of the salsa.
